These chocolate chip cookies are perfect for anyone just venturing into the world of baking. Most likely you’re in a “starter kitchen” which is a fancy term for being too broke or not enough space to “start” your kitchen withe all the baking essentials.

I’ve been baking for 2 years now at my own apartment and I have yet to indulge in the hand mixer. So here’s a recipe for those that just need to make do with what ya got!

Choco Chip Cookies

2 ¼ cups all-purpose flour

1 tsp baking soda

1 tsp salt

1 stick (1/2 cup) + 3 TB of unsalted butter, melted over medium heat

¾ cup sugar

¾ cup brown sugar, packed

1 tsp vanilla

2 eggs

1 package semi-sweet chocolate chips

Pre-heat oven to 375° F. Combine flour, baking soda, and salt. Set aside

Melt butter (about 1 ½ sticks) in saucepan over medium heat. Combine sugar and brown sugar. Pour melted butter over sugars and mix quickly.  Add vanilla, stir, add eggs one at a time, stirring just a little to mix it together between each one. Add in 1/3 of flour mixture, stir, add in another 1/3 of flour, stir, add in remaining and stir to make creamy dough. Stir in morsels.

Drop teaspoonfuls (or a little bigger) on an ungreased baking sheet. Bake for 9 minutes.  Cool on wire rack. Eat or share. Be aware if you share – they will disappear quickly. Enjoy!

$3 cooling rack from Target – definitely worth the splurge!

Oven mitts are also a good splurge. Take it from me – using your t-shirt is just dangerous and cheap. I’ve got a few shirts with quite obvious burn stains due to my frugality.
