As you may have noticed, my cooking is nothing too fancy, just healthy and fairly quick meals to whip up after a long day of work. Follow along if you’re looking for some new ideas to incorporate into your workweek that don’t involve just a bowl of spaghetti. And, as always, send me ideas of recipes you like to try during the week!

If you’re like me, you look forward to a weekend of eating out, lazing around, and bakin’ away! But the long work week sometimes gets me in the mood for a good ol burger n’ fries, so here’s a little spin on it for the veggies and non-veggies out there.

Salmon Burger

1 can boneless, skinless salmon

1 egg white

1 TB dry bread crumbs

½ tsp garlic powder

¼ tsp salt

¼ tsp pepper

2 TB fat-free honey dijon dressing (optional)

Flake salmon in a bowl, mix in egg white.. Sprinkle with garlic powder, salt, and pepper. Add breadcrumbs (add more if need to make patties thick enough to stick together). Heat skillet over med-low heat, coat with cooking spray, and fry patties. About 5-8 mins on each side or until patties are golden brown. Serve with lemon wedges or dip in honey dijon dressing.

In the mood for a “burger-n-fries” meal? Serve patties on toasted English muffins and the Irish fries below. If you’re serving a real Irish-man like I do every night, you’ll probably have to make a “real” burger too. Buy the normal package of ground beef, use about half to make the burger tonight and the other half for homemade Bolognese sauce tomorrow night.

Remember to use a separate skillet tonight so it doesn’t taste (and smell) like fish!

Irish Fries

In the mood for some crispy French fries with your summer barbeque meal? Sick of the same old baked potato as a side? Try out my spin on the classic French fry by simply peeling and slicing some russet potatoes (can use sweet potatoes too) to make delicious and healthy oven fries! With an Irish boyfriend, I had to think of some ways to spice up the same old “meat-and-boiled-potatoes” he grew up with!

2 large russet potatoes, peeled and sliced in ½ – ¾ inch thick strips

2 TB Parmesan cheese (add more for extra flavor if you want)

1 TB oil

¼ tsp salt

½ tsp garlic powder

¼ tsp paprika

½ tsp pepper

Preheat oven to 425. Place sliced potatoes in large mixing bowl. Combine all ingredients and toss potatoes with spice & oil mixture. Spray baking sheet, arrange in one layer. Bake for 30-35 minutes or until golden brown. Enjoy with Salmon Patty recipe.
