Got some leftover ground beef in the freezer? Thaw it out in the fridge while you’re a work, pick up some diced tomatoes, use any leftover veggies you have and WHAMMY – you’ve got homemade bolognese sauce!
Great meal for the night before a race (anyone do the NYC Mini-10k today??), serve with side salad to add in some extra greens. You could definitely substitute ground beef for ground turkey, ground lamb, or even cubes of tofu!
Spaghetti with Meat & Ricotta sauce
3 cloves of garlic
1 TB olive oil
½ lb ground beef
½ tsp salt
½ tsp pepper
¼ tsp garlic powder
1 can diced Italian tomatoes (14.5 oz)
1 zucchini, sliced in half then in quarters
Whole wheat spaghetti
¼ cup pasta sauce
2-3 TB part-skim ricotta cheese
- Chop garlic and heat over medium heat with olive oil.
- Add sliced zucchini, stir, cook for about 5 mins or until zucchini is lightly browned. Feel free to add other leftover veg here (squash or carrots would go great!) Add the ground beef, s&P, and garlic powder. Cook for about 5 minutes.
- Add diced tomatoes and pasta sauce. Stir and simmer for about 5 minutes. Cover and turn off heat, let the sauce thicken while you cook the pasta.
- Top spaghetti with meat sauce, Dollop with about 1 -2 TB’s of ricotta cheese on each plate. Enjoy 🙂
Obviously a friday night is not complete without a stroll to my new favorite ice cream/italian ice/sherbert place: Ralph’s! The minute I walked in I knew I was in heaven because listed above me was about 10 different types of Peanut Butter flavored ices and sherberts. AHHHHH-mazing! Of course, the boyfriend indulged in a hot fudge brownie sundae, yes it was as sinful as it sounds, and I stuck with Peanut Butter cup creme ice. Note to self, lactaid pills are totally necessary before venturing back to Ralph’s. It may be ice but it still had some dairy in it!
