It’s 5 PM on a Friday night. You’re week is over and it is officially the WEEKEND!!! Now you have one more decision before you’re brain enters into full weekend mode: What are we having for dinner?
One of my goals for the new year is to be more cost-efficient with out groceries. We are extremely blessed to not be strapped for cash, but we do want to save up for a lovely honeymoon and various other wedding and general life expenses. Without a budget or a general meal plan, I can easily spend $100 on groceries each week and not even make 7 full meals. Most Friday nights usually are chill for me and the fiance; good food and a movie all snuggled on the couch is an ideal way to end the week. Ordering pizza used to be the go-to game decision for Friday but lately I’ve really enjoyed cooking whatever we have on hand or whipping up my own pizza! So tonight if you have some ground beef, turkey, or canned salmon around make some burgers and oven fries for a yummy and still fairly healthy way to kick off the weekend!
Turkey Burgers & Oven Fries
- 1/2 lb ground turkey
- salt, pepper
- 2 TB shredded cheese
- Rolls, sandwich thins, pita, or english muffin
Combine ground turkey, shredded cheese, and salt and pepper to taste in a bowl. Form into patties and cook to temperature liking (depending on what meat you’re using). If you bought the 1 lb package, form the rest into patties and freeze for another Friday night!
Meanwhile, preheat oven to 425. Peel and slice potatoes then mix with the seasoning below. Spray baking sheet with cooking spray and line potatoes in single layer. Bake for 15 minutes, turn over and bake for another 15 minutes.
- 2 medium baking potatoes, peeled and sliced lengthwise into 1/2 in long slices.
- 1 TB EV olive oil
- 2 TB parmesan
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp salt, 1/4 tsp pepper
It’s quick, easy, yummy AND you don’t have to leave your abode if you’re a Friday night homebody like me!
